UPDATE!
Hey hey hey...I REALLY want to be good at this blogging thing but for some reason I just can't seem to sit down and write on a daily basis. It's hit or miss when a post comes from me. This past week has been pretty good and pretty uneventful. I do have some pictures to share of our last weekend. The f
un began on Saturday night with Kevin and Mindy. They introduced us to what may now be my FAVORITE new restaurant. If you love seafood and sushi, Noa Noa in Warsaw, IN is fabulous! Both couples had a combo plates FULL of sushi and they even threw a little octupus in there ( not a fan!).

Sunday started out with the 4h fair 5k road race. Many of the girl's on the team and I decided to do the race and were decked out in some pretty sweet tank tops. I ran 20:50 and got 3rd in my age group...I was pleased for how little I had been running before the race. There were some pretty hilarious guys wearing costumes in the race that I WISH I would have taken a picture of. Just a few of my favorites: 2 men in big baby diapers, a large man dressed like a transformer squirting people with water, and someone dressed like a twinkie. I hate to admit it....but I did get beaten by the Twinkie...YES the Twinkie. Just as the race had finished I was doing a mile cooldown back to Neal's jeep when it started POURING and I was nice and soaked by the time I got back to Neal. We were supposed to go with a bunch of friends that night to eat at the fair and go see Jars of Clay but because of the rain the outing was canceled. Neal and I were not about to let a little rain stop us from the only day we were going to get fair food!!! (It was the only day it was free to go to the fair...and we weren't about to go the other days and pay 8 bucks a piece to get in to the fair). But...let me just tell you about the AMAZING assortment of food we ate. First, from a recommendation by our friend Mindy we headed straight for the steak tips! Words can't describe....tips of medium cooked juicy steak topped with mashed potatoes, camelized onions, and mushrooms. ohhh yeaaa. Then after walking that off for a bit we were ready for round two: Mozzarella FINGERS! Just check out the picture! Lastly, I had to get a red barn elephant ear to satisfy my sweet tooth. After eating we walked home and ZONKED out for the rest of the evening....wonderful night!
Neal has another softball game tonight and I'm outtie to watch him play. They are playing in the "play-in" game just to make the tournament...if that tells you anything about how "good" they are! haha

It's an beautiful day in Goshen today! I've enjoyed having my cross country team over for a run, GREAT breakfast made by Neal, super long mid-day nap, walk to the gas station to get an ORANGE gatorade and a relaxing afternoon! Neal is back home from his long recruiting trip and it's great to finally have him back home. I don't really enjoy living alone, other than a few occasional days here and there for QUIET and RELAXATION. I will say though, that is is has been nice to spend some additional time with God lately. I've been severely lacking in the discipline department and this week past week has been nice to spend additional time reading, learning, and praying. I always think I can do this life thing on my own until God shows me over and over again how much I need him. (You'd have thought I would have learned by now.) I also want to share how much I love our small group Neal and I go to on Tuesday's. One of my biggest prayers when moving to Goshen was to develop good, solid relationships with other people and this group has definitely answered my prayers. It's been great getting to know everyone and developing friendships that exist beyond Tuesday nights!
Well...Neal's got a softball game and I'm going to go watch him DOMINATE at 3rd base.

Mini taco salad
Neal surprised me and came home from Chicago tonight during his long recruiting road trip. So I finally had a reason to mak
e an actual dinner and Neal loved it! Mini taco salad... it's quick, easy, and tasty (my kind of meal).
Here's the recipe:
soft shell tortillas
1lb. ground beef or ground turkey ( we prefer turkey!)
1 cup salsa
onions (to taste)
lettuce
tomatoes
shredded cheese
To make the mini taco bowls I take regular taco sized soft shell tortillas and cut out smaller circle sized tortillas (with a pizza cutter). Place the tortillas inside muffin tins making sure to leave an opening for the filling. Preheat the oven to 350 and bake for 10-12 minutes.
Meanwhile, brown your meat in a
skillet and then add onions, salsa, and I prefer to add some brown sugar, chile powder, salt and pepper to add some more flava! Keep this on simmer for another 5-10 minutes.
Spoon your meat into the taco bowls and to
p with lettuce, cheese, tomatoes, etc! I like to serve this dish with brown rice. Hope you like it!!

Also, we are in the process of looking for a car...my old cor"sucka" is starting to poop out. If anyone knows of anything reliable and between 3,000-6,000, let us know!
First Anniversary
I ABSOLUTELY love reading blogs and have been thinking and Neal has been telling me start my own for some time now and so I'm finally jumping on board. I love reading blogs that share good recipies, helpful household and craft ideas, and lots of photos!! Hopefully I can keep up with this and share a bit about the life of the Neal and I.
Last Sunday was our first anniversary. We went up to Grand Rapids for the weekend just to hang out in the city and eat some GOOD food! We had alot of fun and I even found an amazing deal on a hotel. If you go to visitgrandrapids.org they have a deal with several (probably 10-15) hotels that are offering a free ipod shuffle and two free movie tickets with your stay. I think our rooms cost approx. 100 dollars per night and plus all the fun free things we got...I think it was a GREAT deal! I'll post some pictures here soon, but for now I'm in Peru with my family and we're going to get some lunch. It's been great spending time with them and my sister who I don't get to see very often.
